Cauliflower and White Bean Bake

Tonight’s meal comes from the Forks over Knives cookbook.  I am dedicating this post and recipe to my friend Kristi Jean.  Kristi was kind enough to send me the Forks over Knives cookbook as a gift.  We should all be so fortunate to have a kind,  caring friend like Kristi.   Cauliflower and White Bean Bake was an easy and very tasty recipe to make.  It’s very spicy,  but I highly recommend it!

In this dish,  cauliflower and  beans are baked in a tangy sauce with a kick!  You can use any white bean you like in place of Navy Beans if you like.  I used Navy Beans.

INGREDIENTS…

1 medium head cauliflower,  cut into florets,  steamed for 4 minutes( I steamed them a bit longer) and rinsed until cool.

One 6-ounce can diced mild green chiles,  drained

Zest of 1 lime,  juice of 2 limes

4 cups cooked navy beans,  or two 15 ounce cans,  drained and rinsed

1 batch no-cheese sauce(recipe to follow)

2 tablespoons ancho chile powder

2 teaspoons crushed red pepper flakes

Before we proceed with the further with the recipe,  here is how you make the No-cheese sauce…

INGREDIENTS….

1 large yellow onion,  peeled and coarsely chopped

1 large red bell pepper,  seeded and coarsely chopped

2 tablespoons cashews,  toasted

1 tablespoon tahini

1 cup nutritional yeast

Salt to taste

PREPARATION…

Combine all ingredients in a food processor or blender( I used a blender) in the order given and puree until smooth and creamy,  adding up to 1/2 cup water if necessary to achieve a smooth consistency.

CONTINUING WITH THE RECIPE FOR THE CAULIFLOWER AND WHITE BEAN BAKE…

Preheat oven to 375 degrees F.

Combine the Cauliflower,  diced chiles,  lime zest and juice,  and beans in a large bowl.  Spoon the mixture into the bottom of a 9 x 13 inch baking dish.  Set aside.

Combine No-Cheese sauce with the ancho chile powder and crushed red pepper flakes.  Pour the sauce over the cauliflower mixture and bake for 30 minutes,  or until bubbly.

Serve!

As most of my friends know,  I am not a huge fan of really spicy food,  and this is definitely spicy.  But it was very good!    I highly recommend this dish!
