Sweet and Spicy Tempeh with Green Mango Salad

Tonight’s dinner was another recipe from Purple Carrot,  purplecarrot.com   Sweet and Spicy Tempeh with Green Mango Salad is a very tasty and easy to prepare meal.  The suggested time required to make it was 30 minutes,  but it did take longer than that.

INGREDIENTS…

2 tablespoons vegetable oil

Salt

8oz  Tempeh

2 tablespoons agave

1/4 teaspoon cayenne

1 tablespoon sambal

Parchment paper

2 Green Mangos

1 Grapefruit

1 Scallion

2 Cucumbers

Garlic

1 lime

1 tablespoon peanut butter

1 teaspoon soy sauce

1 teaspoon turbinado sugar

1/8 teaspoon red pepper flakes

Fresh Cilantro

PREPARATION…

BAKE THE TEMPEH…

Preheat oven to 350 degrees.  Halve the tempeh lengthwise and then into 16 thin triangles.  In a medium bowl,  toss the tempeh with 2 tablespoons vegetable oil,  agave,  a pinch of cayenne(adding more depending on your affinity for heat),  sambal,  and a pinch of salt.  Put the tempeh on parchment paper on a rimmed baking sheet and bake until golden brown,  about 15-20 minutes.

RINSE,  PREP,  AND REPEAT…

Rinse and peel the mango.  Cut the flesh away from the pit and shred using a box grater.  Put the mango into a large bowl.  Cut the ends,  peel and pith off the grapefruit.  Supreme the grapefruit into the bowl by using a knife to cut out the sections of flesh,  being sure to leave the membrane.  Rinse,  trim,  and chop the scallion and add to the bowl.  Rinse and dice the cucumbers and add to the bowl.

PLAY DRESS UP…

Mince the garlic and add it to a small bowl.  Rinse and halve the lime and juice it into the bowl with the garlic.  Add the peanut butter,  soy sauce,  sugar,  and red pepper flakes.  Whisk until well-blended.  Add the dressing to the mango salad in the large bowl and toss.

PLATE TO PERFECTION…

Rinse and pick the cilantro leaves.  Put bed of the dressed mango salad on the plate.  Top with the tempeh triangles and garnish with whole cilantro leaves.

FINAL THOUGHTS…

Again,  this was a tasty and fairly easy meal to make.  Make sure you properly cut the flesh away from the mangos as it will make it easier to grate them.   I would definitely recommend this dish!
